Salmone Alla Mostarda

Filets of Salmon
tablespoons olive oil
Salt and Pepper
Sauce

Teaspoon finely chopped shallot
tablespoon butter
tablespoons Dijon mustard
tablespoons mustard with seeds
tablespoons honey
cup white wine
ounces heavy cream
Salt and Pepper

Preparation
Heat the olive oil in a sautee pan.
Add Salmon Filets and sautee to lightly brown each side. Once lightly brown place in a 350 degree oven for 10 minutes.

Sauce
Cook shallots with butter in sauté pan over medium heat until lightly brown. Add Dijon mustard, seeded mustard, and honey, stirring frequently 2 3 minutes. Add white wine and cook mixture over low flame until just boiling. Add heavy cream, salt and pepper and continue to cook over low flame until mixture starts to thicken.

Remove the Salmon from the oven and drizzle with Mustard Sauce.
